Hi, my name is Deborah Fox. I am the writer of the healthy nutrition series: The Art of Basic Food, Easy Healthy Breakfasts, Simple Meals for Work, Simple Meals for School, Special Meals for Outings, and My Secret. All of my nutrition books are based on a combination of healthy nutrition principles using Mediterranean cuisine.
Mediterranean cuisine consists of colorful, varied, nutrient-rich and delicious food. It is based on fresh products, plenty of vegetables and herbs, legumes and grains, olive oil, cheese, and meats if you like.
It all started when I almost gave up on weight loss altogether. I found myself eating salad and still gaining weight. Not only didn't I lose weight but I also continued to put on weight.
It was then that I decided to learn about healthy nutrition. I researched the subject from every possible direction and consulted experts.
I built menus, conducted experiments and updated existing recipes. I realized that what we had been eating – white flour, white rice, white flour pasta, processed foods, and preservatives – in fact not only did not contribute at all to our health but made us all unhealthy and overweight.
I started to cook delicious healthy food rich in fiber, minerals and vitamins. Gradually my husband and my 10-year-old son lost about 19 pounds each. My 16-year-old son lost about 30 extra pounds, and I lost 13 pounds. We still occasionally eat sweets or cakes, but now we know our boundaries. We have learned that there is no need to count calories but rather to just be aware of the quantity and quality of the food we eat.
If the majority of the food we eat consists of high quality, nutritious food, we can make exceptions without compromising our health.
My method is not a diet! Healthy nutrition is a way of life. When you get used to it, you can't go back. You just wonder how you could have ignored your own body for so many years.
